Antioxidant Activity of Water-soluble Chitosan with Melandrium firmum Extract

Abstract

|
This study was performed to determine the antioxidative activity of solvent extracts from Melandrium firmum with water-soluble chitosan (WSCs). Their extraction yields were 5.1%, 1.6% and 2.99% in D.W., MeOH and EtOH respectively. The total polyphenol compounds were 25.8 mg/g, 26.5 mg/g and 27.1 mg/g in D.W, MeOH, and EtOH respectively. The radicalscavenging activity was measured through the DPPH assay appearing highest in MeOH extract. Reducing power has similartendency with radical scavenging activity. When WSCs was added to Melandrium firmum Extract, the DPPH radical scavenging activity showed higher antioxidant activities, but reducing power was similar with the thing that used only the extract.
